'Nduja

' Nduja is a very spicy, savory, soft, Italian salami sausage. It was originally produced in the southern Calabrian town Spilinga and environment. Nowadays Nduja is widespread throughout Calabria. The word " Nduja " comes from the French andouille, a French sausage.

' Nduja can be used cold as a spread or to flavor sauces. In order to develop the full flavor of it is heated and served with toasted white bread.

Production

The ' Nduja mixture consists of pork, salt and chili. This is filled into a pig intestine. After smoking the sausage is aged for several months. ' Nduja is seasoned very sharp.
