2-hydroxy -2-methyl -3- oxobutyric acid is a chiral organic acid, the anion, a 2- acetolactate and Acetyllactat, as an intermediate for the 2,3- Butandiolgärung, a variant of the mixed acid fermentation occurs.

Reaction sequence

2 -acetolactate produced by the fusion of two molecules of pyruvate with the simultaneous cleavage of one molecule of CO2. Then, in turn, a CO2 molecule is cleaved ( by the enzyme 2 -acetolactate decarboxylase ) and acetoin is produced which can be detected by the Voges - Proskauer test. Last acetoin is reduced by NADH / H and there is 2,3- butanediol.
