Acidity regulator

Acidity regulators are food additives that keep the acidity or alkalinity and thus the desired pH value of a food constant. It usually involves organic acids and their salts, carbonates, more rarely, inorganic acids and their salts. The addition of an acid regulator part, the enhanced strength and rigidity of the food, produces a desired effect of improving the precipitation and preservatives. Unlike acidifiers they are not used to the change in taste of food. Their effect is based on the formation of a buffering system in the food, in which changes only slightly or not to the addition of acidic or basic materials, the pH value.
