Aconitic acid is the common name for 1,2,3- Propentricarbonsäure, an unsaturated organic compound having three carboxylic acid functions. The aconitic acid is present as cis- and the trans-isomer. Its salts are called Aconitate.
Aconitic acid can be produced by sulfuric acid dehydration of citric acid. The cis- aconitic acid is an intermediate in the conversion of citrate to isocitrate by aconitase in the citric acid cycle and glyoxylate cycle. It comes in a free form in the flower Monkshood (Aconitum napellus ), but also in other plants as Common Yarrow ( Achillea millefolium ) and the Christmas rose.
The cis isomer forms very easily an anhydride having a melting point of 75 ° C.
