Actinidain is an enzyme in the kiwi fruit, which catalyzes the breakdown of proteins. It calls for some individuals produce an allergic reaction and has been identified as the major allergen in kiwifruit. Technically Actinidain is ideal for the degradation of collagen and separation of cell types in meat blends.
