Ajika

Adschika ( Abkhaz аџьыка, georgian აჯიკა ) is a pasty, cooked seasoning sauce that is served in the Georgian kitchen mostly for meat, poultry and fish.

It consists of hot pepper and various local herbs typical. They are available in red and green colors. For red Adschika mature, immature for green chillies Adschika be used. The pods are ground, cooked with oil, onions, garlic, coriander, dill, blue fenugreek, ground nuts, salt, inter alia, Herbs and spices added.

The sauce is originally from the regions of Abkhazia and Samegrelo in western Georgia. It is now popular throughout the Caucasus and Russia. There homemade Adschika is traded on markets. It is also available canned in the grocery trade.
