Akashi-yaki

Akashi -yaki (Japanese明石 焼き) are enveloped by omelette batter, baked or fried Krakenarmteile. They are a specialty of the Japanese city of Akashi west of Kobe. In Akashi even this small court or the sub-gallery Tamago -yaki is called (玉子 焼き).

Akashi -yaki is similar to Tako- yaki very much, but instead of plum-sized balls of dough in the Krakenarmstückchen omelet balls are inserted and served on a wooden board.

Unlike the Takoyaki very soft Akashi -yaki - pieces are not coated or topped with sauce, but only dunked on the way to the mouth in dashi, a kind of clear broth with hardly any flavor.

For street sales to Akashi -yaki is because of its consistency less than the more common relatives Tako -yaki. Akashi -yaki is mainly cooked in restaurants in Akashi and Kobe, as well as in families in Akashi. According enjoys Akashi -yaki - where it is known - a higher reputation and is considered to be exquisite.
