Anethole is an organic chemical compound which is counted among the phenylpropanoids due to their biosynthetic pathway. It is a constituent of various essential oils, for example, anise oil and comes as trans-anethole and cis -anethole in fennel, anise and star anise before. The smell of anethole is the cause of the classic aniseed flavor.

Because of the double bond present in anethole are two isomers: cis -and trans -anethole. Both isomers have different physical properties. A structural isomer of anethole is estragole.

Properties

Add 1 liter of ethanol 500 ml anethole are soluble. However, it is very poorly soluble in water. The flash point is 90 ° C. trans-anethole is a white, crystalline, sweet-tasting solid which melts at 21.4 ° C to form a colorless, oily liquid. The cis -anethole is liquid and frozen at -22 ° C.

Physiology
