Arachidic acid (n- eicosanoic acid ) is a chemical compound selected from the group consisting of saturated higher fatty acids. It is a white fluffy solid which is stable under normal ambient conditions. The name of arachidic acid is derived from the Greek word for peanut Arachis.

Occurrence

Arachidic acid is esterified with glycerol present in various vegetable oils, such as peanut oil (1%), cocoa butter, soybean oil (2%), sunflower oil (1%) and rapeseed oil. A particularly high proportion of Arachinsäureresten has the jojoba oil, where the proportion between 60 and 70 % of the total fatty acid residues may be.

Production and representation

Arachidic acid can be obtained by hydrogenation of arachidonic acid.
