Arrabbiata sauce

Penne all'arrabbiata (such as " noodles on angry / passionate way " ) is a traditional pasta dish from the Lazio.

To prepare onions and garlic are finely cradled, depending on the recipe and pork cheek or bacon ( pancetta for example ) cut into thin strips, and everything cooked in olive oil until it becomes brown. Then peeled, cored and diced tomato and a chili pepper are added and cooked for a few minutes. The chilli can be added either crushed or scored as a whole. Whole chilies can be removed before serving again from the sauce. Finally, a half-ready cooked penne and grated pecorino romano happen and the noodles are finished cooking with gentle stirring in the sauce. Serves Penne all'arrabbiata with grated pecorino cheese.

If other types of pasta are used, it is called depending on eg all'arrabbiata Spaghetti, Maccheroni all'arrabbiata or pennette all'arrabbiata.
