Arrack

Arrack ( not to be confused with the Arabic aniseed spirits Arak ) is a palm sugar juice ( molasses, see Palm wine) and fermented rice mash spirit drink produced, often called rice brandy, which in India ( Goa), Sri Lanka and Southeast Asia is produced. Sometimes extracts of dates and millet are mixed before burning. In Bali arrack is traditionally obtained also from the Lontarpalme and used for sacrifices.

The most famous is the Batavia Arrack - Arrack from Java. The imported into Germany Original arrack has 50 to 70 percent alcohol by volume.

Arrack is used as a flavoring in confectionery and pastry to flavor desserts, cream and butter creams. Also for cocktails with exotic fruits are arrack an interesting touch.

Arrack is also one of the original ingredients of punch.
