Baba Ghanoush

Baba ghanoush (Arabic بابا غنوج, DMG Bābā ġannūǧ ) is a puree of Arab cuisine eggplant and sesame paste ( tahini ), which is served as a dip or a side dish, for example, to shawarma and falafel.

To prepare grilled and peeled eggplants are mashed and blended with tahini and seasoned with garlic, salt, pepper, cumin and lemon juice. Before serving, will be added a dash of olive oil, often including parsley or cilantro.
