Sauce Choron or Choronsauce is a variation of béarnaise sauce ( rarely also the Dutch sauce) that is mixed with tomato paste.
To prepare a sauce béarnaise is supplemented with tomato paste, which can be omitted depending on the recipe tarragon and chervil.
It was named after Alexandre Étienne Choron French Chef ( 1837-1924 ).
