Behenic acid (n- docosanoic acid ) is a chemical compound selected from the group consisting of saturated higher fatty acids.
Occurrence
Behenic comes - chemically bound as glycerol esters - naturally in various plants and plant oils, such as peanut and canola, but also in the beans of the coffee plant before. It is striking that the acid was found in coffee bean oil almost exclusively as an ester with the two terpenes cafestol and kahweol.
Behenate
Behenate are salts of behenic acid such as calcium behenate. Calcium behenate is used in the production of tablets.
