Beni shōga

Beni shoga (Japanese红 生姜,べにしょうが) is a type of Tsukemono (Japanese pickles ). It is made from sliced ​​ginger into strips, colored red and then marinated in Umezu (梅 酢), which occurs when you insert Umeboshi (apricot ). The red color comes from the red perilla. It is served with very many Japanese dishes, including gyudon, okonomiyaki and yakisoba.

Beni shoga is not to be confused with gari, which served with sushi pickled ginger.
