Bregenwurst
Bregenwurst or Brägenwurst is a raw or lightly smoked sausage made from lean pork, pork belly, onions, salt and pepper. It is a specialty in Lower Saxony and Saxony -Anhalt and is usually eaten with kale, which is regionally referred to as brown coal; this allowed to her for a while with the carbon cook together.
Its name comes from the Bregenwurst previously added pig brain: Low German is Bregen or Brägen for Brain, today may no longer be processed brain.
