Brigade de cuisine

With kitchen Brigade (French Brigade de cuisine ) (including kitchen staff ), called - refers to the group of employees of a large kitchen in the restaurant business and in housekeeping

Hierarchy

  • Chef ( de cuisine ) - the chef, also commonly called Maître de Cuisine, this title requires a championship title
  • Sous Chef - deputy

  • Demi Chef de Partie - deputy and shift supervisor of an item ( bachelor of professional experience)
  • Commis de Cuisine - Young Chef

Depending on the size kitchen more ranks are introduced, for example:

  • ( Directeur de cuisine ) chef ( in large hotel with several kitchens)
  • Executive Sous Chef - First Deputy in several Sous Chefs
  • Junior Sous Chef ( junior sous chef )

In addition, in the kitchen other staff shall be:

  • Aide de cuisine (kitchen help, assistant chef )
  • Apprentis ( apprentice )
  • Plongeur / Casserolier ( washing of cooking and serving dishes ) (partly also the utility attributed to )
  • Trainees ( interns)

Trivia

The kitchen brigade is also called the White Brigade because of the traditional color of clothing, and is therefore in contrast to the service area, the Black Brigade.
