Brilliant black BN (E 151, and Black PN) is a synthetic, water-soluble azo dye as a food coloring is used in the food industry.

Using Brilliant Black, for example, caviar substitutes, sauces, confectionery, liquorice and cosmetics such as shampoos, foam and shower baths and liquid soaps are colored. By the use of the dye purple, brown and black shades can be achieved.

Brilliant Black is considered to be harmless to health, in animal studies, a slight influence on digestive enzymes could be detected. However, it is believed that the dye in the initiation of skin reactions ( eczema ) and asthma may be involved.
