Brown sugar#Natural brown sugar

Demerara sugar (also demerera sugar) is the umbrella term for a special kind of cane sugar. It consists of large crystals, and has a Melassegehalt of about 2 to 3%.

Demerara is usually of a brown color, of the original color of cane sugar. The appellation comes from the Dutch colony of that name, where the sugar was initially almost exclusively produced. Today, the bulk of production has shifted to Mauritius.

Demerara sugar is often used in baking or to sweeten beverages such as tea or coffee.
