Burrata

Burrata is an Italian cream cheese type Filata.

Burrata is a special form of mozzarella, but is always made ​​from cow's milk and has 44 % fat in dry matter. It has the shape of a small sac that is very similar to a mozzarella and a thick cream cheese inside which is composed of cream and mozzarella untreated strands. Typically, the Burrata is packed in green leaves of the lily crop asphodel, which makes it very visually appealing. Burrata is Italian so much as " buttered ", which is pointed to the creamy consistency.

Burrata was formerly produced in Puglia, to keep butter fresh longer. Without refrigerator butter was rancid quickly, but the butter kept in the interior of the cheese longer time and gave the cheese its name.
