Calcium malate is the calcium salt of malic acid (E 296 ) and a food additive.
Production and representation
Calcium malate can be obtained by reaction of malic acid and calcium carbonate.
Use
Calcium malate used in the food industry as an additive or acidity regulator e 352 (for example, potato chips). This exploits, which will release it depending on the milieu controlled malic acid and so the acidity of the food remains relatively constant. As a natural part of the cell, the malic acid and its salts ( Malate ) are considered safe. The amount ingested is incorporated into the metabolism. In chemistry it is used as a buffer reagent.
