Calcium sorbate is the calcium salt of the sorbic acid, is synthesized and is used as a preservative.
Effect
The preservative is the addition of water over a longer period, the preservative sorbic acid controlled release. This causes the food to be preserved over the long term is made durable and prevents the formation of mold. In juices secondary fermentation is prevented. Aflatoxin is also prevented.
Use
Calcium sorbate is used for many different foods such as mayonnaise, cheese, packaged sliced bread, jam, margarine and fruit juices. In addition, for cosmetics, chewing tobacco and for the treatment of food packaging.
It is approved in the EU as a food additive under the E number 203.
Compatibility
The sorbic acid, the mucous membranes and the skin very sensitive to irritate people. The permitted daily dose is 0-25 mg per kilogram of body weight.
