The White Winter Calville ( White Winterkalvill, Calville blanc d'hiver ), also paradise apple, raspberry apple, quince and White Cardinal called, is a sort of culture apple (Malus domestica). It is an old, very tasty apple variety that was probably bred in France before 1600 and is already mentioned in 1598 in Bad Boll under the name of J.Bauhin White Zurich apple.

Taste and food value

The White Winterkalvill is one of the so-called dessert apples (that is for raw consumption determined ) and is considered one of the most prized varieties of taste. At the beginning of the 20th century, this variety were paid between 0.50 to 1.50 Reichsmark per piece for particularly well-grown fruit. The Zentner Price (50 kg) was 100 to 150 marks - a monthly salary inspectors at the time was 412 Reichsmark.

The flavourful, juicy and sweet-sour apples have in good maturity a distinctive strawberry flavor, hence the name falsely used White strawberry or raspberry apple. The flesh of this apple is " [ ... ] by a so selected Weingeschmak that one believes to eat pineapple, or strawberries, which are dressed with champagne ," says JP Mayer 1801 in his Pomona Franconica about this variety.

Maturity and care

The fruits ripen from October and from December ripe enough to eat ( that is, between harvest and consumption should the apples to full flavor development store a few weeks ). The apples keep under favorable conditions to April.

The Winterkalvill is very maintenance-intensive and therefore rarely found in fruit growing enthusiasts. Because of its early flowering and short he is very weather sensitive. It is therefore recommended to use it as a trellis tree on slow-growing base of a rain-protected south wall. Since the apple skin is also sensitive, the apple must be carefully harvested and stored. The tree is considered to be susceptible to various diseases and pests.
