Carac (pastry)

Carac is a patisserie pastry from Switzerland. It is a small tart with characteristic green color and a chocolate point.

The basis is a pie crust of baked pastry. Therein a ganache is poured, which consists of two parts and one part of chocolate cream. After cooling, the mass of an apricot glaze is applied and covered with green fondant. A point from Chocolate Couverture is a bet on the final still.
