Caul fat

The fat network is a fine, net-like fatty tissue ( omentum majus ) from the peritoneum of animals such as cattle, sheep or pig. In the kitchen, especially the pork caul (or pork caul ) is used for holding together dishes such as rolls, meatloaf, Crépinettes or Adrio, to keep them at the beginning of cooking from falling apart. During the cooking process, it dissolves almost completely.

The fat network is not part of the standard range of butchers.
