Cayambe, Ecuador

Cayambe is a city in the province of Pichincha in Ecuador, lying northeast of the capital Quito. Cayambe is the capital of the canton of the same name, had in the year 2001 30.473 inhabitants. The city lies at the foot of the Cayambe volcano, the third highest mountain in Ecuador with 5.790 m.

Since the 1990s, canton and city have experienced significant population growth, which is mainly due to the fact that the Cayambe surrounding haciendas have become one of the world's main growing areas of roses.

From Cayambe and environment also comes into this area very popular regional music style with the same name. In addition, the city is among locals and tourists known for the so-called Bizcoches, a pastry specialty. With the same word pastries are in Colombia generally referred to, in Ecuador but only this type of shortbread. Another culinary specialty is the " queso de hoja " to mention. The name (leaves cheese) comes from the fact that the cheese pancake is sold rolled up as a bar and smashed - and earlier for this purpose, leaves were used. Today, however, plastic sheeting is used.

Cayambe is the birthplace of composer and pianist Luis Humberto Salgado.
