Cecina (meat)

Cecina [ θe'θina ] is a beef jerky. For the production of different parts of cattle are used. The meat is salted in succession, washed, pre-dried, smoked and dried. The entire production process takes at least seven months. Cecina is much darker than ham of pork, the flavor is stronger.

Cecina is a specialty of the province of León in Spain, the Cecina de León is a Protected Geographical Indication ( PGI ).
