Cherry pie

A cherry cake or a cherry cake is a cake, the taste is dominated by cherries as the main ingredient.

Definition

There are different views on what is a cherry pie. According to the dictionary, it refers to a " with cherries occupied [ and with glaze coated ] cake". The Food Encyclopedia by Dr. Oetker describes cherry pie as follows: " one filled with cherries puff ". Giacomo Perrini described in the " Swiss confectioners ' a cherry pie recipe as an independent in contrast to the general recipe for fruit cakes as a puff pastry cake which is topped with sour cherries and ensteinten baked off with a piece of sugar, sour cream and eggs.

Variants

In Full cooking, baking and jams lexicon from 1786 are six varieties of cherry pie listed that Oeconomische Encyclopedia of Krünitz and the German encyclopedia identify four variants. The cherry pie, for example, belongs to the thorn fields of cherry pie. A special form is the Zug cherry, is contained in the cherry syrup or cherry liqueur.
