Chopped liver

Chopped liver ( Yiddish געהאַקטע לעבער ) is a popular among Ashkenazi Jews cold dish that is eaten especially on Shabbat and holidays as a starter. In the United States, chopped liver as Chopped Liver is generally known and is offered in most delis. The court also referred to by its main ingredients as eggs onions ( Yiddish אייער צוויבלן ) and can be prepared without liver.

Preparation and variations

Chopped liver is fried or steamed from liver (usually chicken liver, but any other liver kosher poultry and meat can be used as well ), hard-boiled eggs, raw or steamed onions and fat cooked. The ingredients are finely chopped and mixed, seasoned with salt and pepper and sidelined. Chopped liver is traditionally eaten on bread or matzo with pickled cucumber or radish. If the starter prepared without the liver, raw onions are mostly used. The liver can also be replaced by soft toasted chopped eggplant.
