Churrascaria

A Churrascaria (Portuguese [ ʃuʁaskaɾiɐ ] ) is a traditional restaurant from southern Brazil, where there are mainly grilled meats ( churrasco ). In Germany these restaurants are usually called Rodizio restaurant. Rodizio comes from the Latin Rota (circle, cycle ), in the sense that the skewers are in the eternal cycle of the fire to the table and back. All side dishes are served as an open buffet where the guest uses of your choice. The roasted meat is served fresh from the grill skewer at your table. The service staff cuts at the table for the guest with a very sharp knife, a desired number of slices of meat from the spit off. Periodically, the staff offers different meats.

Each guest table or receives a kind of personal " meat light" - often in the form of a beer mat -, where the two sides are colored red or green. Is the green side uncovered, the service staff continue to offer meat. The red side indicates temporary saturation. Churrascarias are very labor intensive, as many waiters with skewers between the guests and the kitchen commute time.
