Ciorbă de perişoare

Ciorba de perisoare is a sour vegetable soup with meatballs from the south of Romania.

To prepare the soup broth is a first cooked bones with attached meat from pigs (such as ribs or tail). In it, various vegetables such as cabbage, kohlrabi, potatoes, peppers, carrots, beans, squash, leeks, onions and tomatoes are cooked. The soup is seasoned with tomato paste, parsley and lemon juice.

For the meatballs minced meat is processed with cooked rice or cooked millet, steamed onions and eggs into a dough. The balls are also cooked in the soup.

Before serving the soup is alloyed by some recipes even with egg yolk or cream.
