Compote is made from whole or split fruit such as pears or plums. The fruit is gently cooked in a liquid, for example water, syrup, fruit juice or wine. Often spices like cinnamon and cloves are added. The compote can be served fresh cold or hot, or it is cooked in canned goods.

In some areas of the German language area and the cooked to a pulp fruit (like applesauce ) or desserts will be called with or without fruit compote. Occasionally ( for example in Saxony ) there is also a use of the term as a synonym compote for dessert in general.

In the Ukrainian and Russian cuisine, the term compote is a drink that is prepared in advance in large jars with fruit, sugar and hot water and then cooling often in a " Serail " (basement) is turned off. After no more than two months, it will be served for dinner or just drunk at any possible opportunity, usually without the contained fruit.

Compote is served for dessert or an accompaniment to desserts such as cream of wheat. Even with game and poultry dishes compote is served as a side dish, often cooked in red wine pear.
