Cotechino Modena

Pork sausage (from the Italian cotenna, " rind ") is a strongly flavored, Italian pork sausage.

To prepare pork, pig's head, lean pork rind and medium fine to be chopped, seasoned with salt and peppercorns, filled into hog casings and dried in a wood oven and while slightly cooked.

The perishable pork sausage is eaten cooked. To this end, it is all around pierced and simmer left for about two to three hours at a low heat in water. Pork sausage is part of the Bollito misto.
