Cottage pie

Shepherd 's Pie is a traditional British dish.

Composition

The Shepherd 's Pie is basically composed of two layers, a lower and an upper layer. The bottom consists of ground beef, the top of pureed or finely grated potatoes. The minced meat is usually lamb (hence the name " Shepherd cake " ), but this food also like flesh remains of the Sunday roast ( Sunday roast ) is produced.

The layer of meat is usually fried along with fine Zwiebelwürfelchen in the pan, then you let it simmer in the broth. Gladly, other ingredients are added, such as garlic, chopped carrots, peas or other vegetables as well as herbs such as rosemary or oregano. Often tomato paste is used, rare wine.

The top layer is made of mashed potatoes, the butter and sometimes cheese is added. To decorate this layer is sometimes applied with a spray bag on the meat layer. The "cake" is then baked in the oven until golden brown and top is slightly crispy. Sometimes a thin layer of cheese on top is applied quite yet.

Variations

  • The same dish with fish instead of meat is called " Fisherman's Pie" or if it is served in a cream sauce, also called " Admiral 's Pie ".
  • In Australia, an industrially prepared Hackfleischteig is often used, it is covered with mashed potatoes there called " Potato Pie", in New Zealand it is called ' Potato Top Pie ".
  • The North American version is called " Chinese Pie" or "Cowboy Pie". Here, however, a layer of corn and ketchup is inserted between meat and potato yet. In French-speaking Canada, this variant is called " Pâté chinois " (Eng.: Chinese pie). Often the corn is replaced by peas and carrots. In the northeastern U.S. green beans instead of corn to be inserted as an intermediate layer often. The " Mid - West" version is prepared with an intermediate layer of mushroom sauce and green beans and left longer in the oven.
  • For the vegetarian version of the " Shepherd's Pie" a layer of thick beans or other protein rich vegetables is used in place of the meat layer.
  • " Hachi Parmentier " (engl.: " ground beef Parmentier ", named after the initiator and promoter of French potato cultivation Antoine Parmentier ) is a popular French food, which is very similar to the Shepherd 's Pie. It is usually prepared at home, in restaurants, it is rather rare to find. Again Leftover is often recycled.
  • The Turkish version is called " Hasanpaşa kofte " ( Hasan Pasha meatballs ). Here meatballs are formed into small bowls filled with mashed potatoes and topped with tomato sauce. Often peas are introduced as an intermediate layer.
