Coulis

A coulis [ ku'li ] ( altfr. couleis ) is a natural, not spiced and salted, puree of vegetables, fruits and other foods, such as Meat, poultry, game and shellfish. Probably the most well-known is the tomato coulis coulis ( coulis de tomate ). Coulis is for instance the basis of a bisque.

In making a coulis can be used to better Puree with certain products of water, such as Erbsencoulis or other foods with little private water or high starch content.
