Coulommiers cheese

Coulommiers is made from cow's milk soft French cheese with white mold. It is similar to Brie or Camembert and has 45 to 50 percent fat in dry matter.

The little cheese with an average weight of about 350 grams is largely produced in factories in the regions of Ile- de -France and Champagne- Ardenne. It matures within about a month of mild, slightly pilzigen aroma and fine nutty flavor to a strong up racy, spicy smell and taste. Here, the initially pure white layer of mold increasingly discolored reddish brown. The best Coulommiers comes between spring and late autumn on the market. Because there is no binding law which regulates the manufacture, Coulommiers not received the status of a protected designation of origin.

The cheese tastes pure with a few ( red ) grapes and can be used as Brie. As an accompanying drink red wine is recommended, for example, Côtes du Rhône.
