Culinary Heritage of Switzerland

Culinary Heritage of Switzerland (French Patrimoine Culinaire suisse, Italian Patrimonio culinario svizzero, Romanesque Patrimoni CULINAR svizzer ) is a multilingual online encyclopedia of traditional Swiss cuisine.

At the beginning of the project, a parliamentary postulate of the National Josef Zisyadis, which called for the creation of an inventory of the culinary heritage of Switzerland in 2000. Various tourist and agricultural circles supported this concern, as they promised them a better value of local products and the preservation of culinary diversity.

Funded by grants from the Federal Office for Agriculture and the cantons as well as donations of various other organizations and companies of the association was founded Culinary Heritage of Switzerland in 2004. The association commissioned a group of researchers, including anthropologists and historians, writing the article and the implementation of field research at Swiss bakers, butchers, cultural historians, archivists and farmers. As of December 9, 2008, the database open to the public in the four national languages ​​for free.

In order for a food is added to the database, it must be recognized as traditionally Swiss, have been at least 40 years produced and continue to be produced. The project focuses on processed products and consists primarily of product categories, added single unprocessed products with very high regional and cultural anchor. Not included in the database are wines, food and recipes.
