Monoacetyl and diacetyl tartaric acid esters of mono-and diglycerides of fatty acids or Diacetylweinsäureglyceride be prepared from mono-and diglycerides of fatty acids and mono-and diacetyl tartaric acid.

They are used in the food industry as emulsifiers, or as a powder treatment agent. Their effect consists in a better distribution of water in the dough, a better gas retention, better fermentation tolerance and a larger volume of breads and rolls. It is in the EU as a food additive called E 472e without maximum limit ( quantum satis ) generally approved for food. The emulsifier used as a flour treatment agent most frequently is the diacetyl tartaric acid esters ( DATEM ).
