Calcium hydrogen phosphate is a calcium salt of ortho- phosphoric acid, one of the phosphates and has the composition of CaHPO4.

Occurrence and representation

In nature Calciumhydropenphosphat occurs in different modifications. Anhydrous calcium hydrogen phosphate occurs in nature as Monetit, the dihydrate ( CaHPO4 · 2H2O ) is known as brushite. Technical calcium hydrogen phosphate is prepared by reacting calcium hydroxide with phosphoric acid at high temperatures.

Use

Calcium hydrogen phosphate is an acidity regulator and is used for example in the food industry for cherry pie filling into cans. The shelf life of potato products is increased and they are lightened. The creaminess of cheese is increased. In the baking industry it is used as an emulsifier. Upon addition of calcium hydrogen phosphate, the water content of ham and cooked sausage can be increased. Calcium hydrogen phosphate with monocalcium phosphate and calcium phosphate in the EU as a food additive under the joint number E 341 ( " calcium phosphate " ) approved for certain foods, each with different maximum limits for organic food.
