Dimethyl sulfite is the dimethyl ester of sulfurous acid. The abbreviation DMS often used is not clear, since it is also used for dimethyl sulfate. A mix of substances is dangerous because of their different characteristics. Dimethyl sulfite is the simplest organic sulfite.
Production and representation
Although dimethyl formally derived from sulphurous acid, it is prepared by reaction of thionyl chloride and methanol.
