Dipotassium hydrogen phosphate is a chemical compound from the group of hydrogen phosphates. It is in the form of a colorless and odorless solid and is the secondary phosphate of ortho- phosphoric acid dar. It also happens as the trihydrate.

Production and representation

Dipotassium hydrogen phosphate is used for the preparation of buffer solutions, together with potassium or as a component of culture media of bacteria.

In the food industry, dipotassium hydrogen phosphate is used as a complexing agent, acidity regulator and melting salt. It is together with the primary ( KH2PO4 ) and tertiary potassium phosphate ( K3PO4 ) in the EU as a food additive under the joint number E 340 ( " potassium phosphates " ) approved for certain foods, each with different maximum quantity restrictions. After the additive approval regulations are the - for most approved phosphates largely uniform - individual specifications for a wide range with many different types of food. The approved maximum amounts vary from 0.5 to 50 grams per kilogram ( in creamer for ATM), or even the lack of a fixed restriction ( quantum satis - as necessary nutritional supplements and partly in chewing gum ).
