Dirty Rice

Dirty Rice ( " dirty rice " ) is a traditional dish of Cajun cuisine.

It consists of rice, which together with giblets, especially chicken livers and stomachs, cooked, give it its characteristic appearance, the dark ( " dirty "). Similar to a pilaf includes the "Holy Trinity " of Cajun cuisine, sweet peppers, onions and celery, to the court. Parsley and spring onions are frequent additions.
