Dolcelatte

Dolce Latte (Italian for Sweet Milk ) is an Italian blue cheese.

Basically, it involves a soft cheese, the factory- like Gorgonzola is made without complying with the requirements of the protected designation of origin. The name of the cheese, however, is a registered trademark. Dolce Latte is produced as full-fat cheese with 48 % fat in dry matter from pasteurized cow's milk with the addition of noble mold cultures. Since he has no maturity stage, he is rindless.

Under the same name also Torta Crema ( a replica of con gorgonzola mascarpone ) is prepared as layered specialty.

Dolce Latte has been designed by the Italian cheese manufacturer Galbani specifically for the UK market as a softer Gorgonzola variant.
