Duckefett

Duckefett is a simple sauce and a regional specialty, particularly in Kassel, but also the rest of Northern Hesse. It is prepared with bacon, onions, sour cream and occasionally condensed or whole milk. As side dishes to Duckefett also potato dumplings are usually boiled potatoes, served occasionally.

The name is derived from the dips - in the northern Hessian dialect " to duck " - the supplements in the high-fat through the bacon and sour cream sauce. Due to the inexpensive ingredients was Duckefett long as the " poor man's food".
