Eel life history

As glass eels are referred to the juvenile stage of eels ( Anguillidae ), following the willow leaf larval stage. The young fish is called " glass eels " because it is translucent yet at this stage. Elver pass through the sea in the lower reaches ( potamal ) of the rivers to the habitats of adult eels.

Glass eels are mainly in the Basque Country, a traditional Christmas very popular dish, Angulas. In recent years, one has a " Angulas replacement" from surimi developed because of the very high prices (fish protein with added flavoring), called Gulas. The mass is first pressed into molds, then each piece receives two painted with food coloring dots as eyes, to make the product more realistic.
