Elaidic acid (from gr elaion, "oil" ) is a monounsaturated fatty acid. The molecule contains a straight chain of 18 carbon atoms, in the middle of which a single double bond is located. Since the two parts of the chain in the trans position depend on the carbon atoms of the double bond, is also spoken by a trans - fatty acid.

The chemical formula is so CH3 -(CH2) 7 -CH = CH-( CH2 ) 7- COOH, the systematic name of Trans -9- octadecenoic acid. The corresponding cis- isomer, which occurs much more frequently in nature, ie oleic acid.
