Iso-ascorbic acid (also erythorbic ) is an organic acid that is present at room temperature, a colorless, odorless, crystalline, readily water-soluble solid.
Isomers
It occurs as L- and D- iso-ascorbic acid. Their shapes are epimers of ascorbic acid.
Production
Iso-ascorbic acid is produced from sucrose.
Physiological effects
In the human organism iso-ascorbic acid increases the absorption of non-heme iron.
Use
Isoascorbic acid is used in the food industry as an antioxidant and stabilizer. In the U.S. it is increasingly being used as a preservative, since the use of sulfites for preservation of raw food is prohibited by law. Iso-ascorbic acid is approved in the EU as a food additive under the number E 315 for certain Fleischerzeignisse with maximum limits of 0.5, with fish products to 1.5 grams per kilogram.
