Escabeche

Escabeche (from Persian sikbag, "acid food " ) is a traditional dish of the Iberian, South American and North African cuisine.

Fish is rolled in flour and fried in oil, marinated in a marinade of oil, vinegar, water, onion, garlic, bay leaf, carrots, peppers and spices and stained for at least 24 hours. It may be cold, but also boiled up again served as a stew with bread. In Jamaica as " escovitch " in Italy as " escabecio ", " scapece " or " scabetche " means " Savoro " in Greece as " Savoro " and in North Africa.
