Butyrate is a carboxylic acid esters with a distinctive pineapple scent. Because of the pronounced aromatic smell the esters of short-chain carboxylic acids are also called fruit esters ( see also fruit flavor ). It is produced by esterification of butyric acid with ethanol. Will use butyrate as a flavoring in the perfume and liqueur production.
