Fajita

Fajita is a dish of Tex- Mex cuisine, which is the original version of grilled and then chopped beef which is then served with strips of green chili on a wheat tortilla. Fajitas are now also prepared from pork or chicken, more rarely, from shrimp. Among the side dishes often include sour cream, guacamole, salsa, pico de gallo, cheese and tomatoes.

The Spanish word fajita is to faja the diminutive, which can be translated with belt. It referred to the diaphragm known as the oxen origin of the meat in the kitchen language as a hanger steak. In English we speak of skirt steak.

The court is originally from Texas and Mexico border region of the Rio Grande and was eaten by the Cowboys. The hanger steak of beef was one of the battle groups that received the drover on a free day of slaughter. In 1975 appeared the first advertisements for fajitas in Texas newspapers. Today, the term fajita often refers not only to the original recipe, but simply the nature of the preparation and / or meat that is served on tortillas.

In restaurants with Tex- Mex cuisine, it is now often the case, fajitas to serve with peppers and onions on a hot cast iron plate. However, this is not the authentic way to serve the dish and eat.
